Orange Ginger Chia Pudding
Chia Seed Pudding is a great example of this vegan friendly home cooking. It is a simple, fantastic, raw breakfast that will jump start anyone’s morning. Chia seeds are chalk full of omega-3s & 6s, essential fatty acids, fiber and B-vitamins. They are also very versatile and can be used in puddings, baked goods, oatmeal and smoothies. While they are inherently bland, chia seeds quickly and easily absorb the flavor of whatever they are prepared in.
In this case we fixed a chia breakfast pudding with vanilla, orange and ginger flavors, complimented well by fresh fruit and subtle flax seeds. It’s a delicious, balanced way of starting the day.

Orange Ginger Chia Pudding (serves 2)
1 1/4 cups vanilla almond or soy milk
1 tbsp honey
1/4 tsp ground ginger
1 tsp grated orange rind
1/4 cup chia seeds
1/2 orange pieces
1/2 cup blueberries
2 tbsp flax seeds
In a mason jar combine almond milk, honey, ginger, orange rind and chia seeds. Shake until fully combined and refrigerate over night, shaking every 10 minutes for the first 30 minutes until the seeds have set. Serve in a bowl and top with orange, berries and flax seeds.
