Pumpkin Nut Bread


Pumpkin Nut Bread (makes two 9″ loaves)

3 cups pumpkin puree
2 cups sugar
2/3 cup milk
1/2 cup softened butter
4 cups flour
4 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 tsp nutmeg
1 tsp grate ginger
1 cup chopped walnuts

In a large bowl mix the sugar and pumpkin puree. Add the milk and butter, mixing well. In a separate bowl stir together all dry ingredients. Add the dry ingredients to the pumpkin and sugar mixture one cup at a time, mixing until everything is incorporated. Finally, add the nuts.

Pour the batter into a greased 9″ loaf pan and top with a sprinkle of sugar. Cook at 350F for 1 hour or until golden brown. Let cool and then turn out and slice.
