Smoked Salmon Tartare on Cucumber Slices
A quick and easy post on a quick and easy (and very pleasing) hors d’oeuvre. While they may not technically be tartare, these little smoked salmon bites are always a popular snack in our house and are the first to disappear during a cocktail party. Serving the salmon on slices of cucumber, rather then bread, keeps them lighter, crisper and a little bit more appropriate for the warmer weather. They take just minutes to prepare and look and taste great. Next time your are pressed for time with guest on the way try little gem, you won’t be sorry.
Salmon Tartar on Cucumber Slices (serves 12)
1 lb smoked salmon, diced
1 handful capers, rinsed and diced
1 handful diced red onion
Enough crème fraîche to hold the salmon together
Lemon juice to taste
Salt and Pepper to taste
Not too complicated: Mix all ingredients in a bowl, adding more or less capers and onion depending on your preference. The crème fraîche should be used sparingly and is meant to hold everything together. Add a splash of lemon juice, some salt and pepper and serve on sliced cucumber. You may substitute chive for the red onion.
