Cilantro Lime Chicken
After claiming recently that I never make Mexican food, I found myself with a handful of ingredients reminiscent of those flavors found south of the border. They happen to be a few of my favorite things and two flavors that compliment each other extremely well; cilantro and lime.
With a refrigerator full of the necessary ingredients and very little time to fix a meal, I threw together a simple and tasty recipe that I often turn to when in a pinch for time: Cilantro Lime Chicken. Top with sauteed peppers and serve with a side of rice and black beans and you have yourself a lovely homemade Mexican meal. Just add guacamole.
Cilantro Lime Chicken (serves 2)
2 chicken breasts
1 orange bell pepper
4 scallions, sliced
juice of two limes
1 large handful cilantro
2 tbsp EVOO
Salt and pepper to taste
Slice chicken breasts and place in a bowl. Cover with lemon juice and let sit while you slice your pepper. Heat oil on medium high heat in a pan. Brown chicken on both sides. Add lime juice and peppers and cook approximately 10 minutes. When just about to serve add scallions, cilantro and salt and pepper to taste.
